Millie Tang’s Blueberry & Thyme Collins

This refreshing thyme and blueberry cocktail recipe is the perfect way to celebrate the new glassware range at Coles. Get at least one brand new video every week, including recipes, kitchen hacks and handy cooking tips to help you feed your family and friends: @coles Millie Tang’s blueberry and thyme Collins Makes 1 Prep 5 mins (+ cooling time) Cooking 10 mins 50ml dry gin 30ml lemon juice Ice cubes, to serve Soda water, to serve Blueberry and thyme skewer, to decorate Blueberry & thyme syrup 1 cup (220g) caster sugar 1/2 x 125g punnet blueberries 8 lemon thyme sprigs or thyme sprigs 1. To make the blueberry and thyme syrup, place 1 cup (220g) caster sugar and ½ cup (125ml) water in a saucepan over low heat. Cook, stirring, until the sugar dissolves (do not boil). 2. Add the blueberries. Simmer for 5 mins or until the blueberries soften, pressing the blueberries to release their juices. Remove from heat and stir in the thyme. Set aside to cool completely. Strain through a fine sieve into an airtight jar and discard the solids. 3. Place the gin, lemon juice and 20ml blueberry and thyme syrup in a tall glass with ice cubes. Top with soda and gently stir to combine. Decorate with the skewer. Want more easy recipes? Millie Tang’s ‘Sprigtime’ Cocktail

Get at least one brand new video every week, including recipes, kitchen hacks and handy cooking tips to help you feed your family and friends: @coles Millie Tang’s ‘sprigtime’ cocktail Makes 1 Prep 5 mins (+ cooling time) Cooking 5 mins 40ml blanco tequila 20ml lime juice Ice cubes, to serve Sparkling wine or champagne, to serve Rosemary sprig, to decorate Rosemary honey syrup 1 cup (350g) honey 1 large rosemary sprig, leaves picked 1. To make the rosemary honey syrup, place honey and 1 cup (250ml) water in a saucepan over low heat and bring to a simmer (do not boil). Stir in the rosemary leaves. Cool completely. Strain through a fine sieve into an airtight jar. 2. Place the tequila, lime juice and 20ml rosemary honey syrup in a cocktail shaker with ice cubes. Shake until chilled. Strain mixture through a fine sieve into a champagne glass. Top with wine or champagne and decorate with rosemary. Want more easy recipes? In celebration of the new collectable glassware range at Coles, Millie Tang has put a fresh twist on a classic Moscow mule recipe. Get at least one brand new video every week, including recipes, kitchen hacks and handy cooking tips to help you feed your family and friends: @coles Millie Tang’s lychee and cucumber mule Makes 1 Prep 5 mins 30ml vodka 10ml lychee liqueur 20ml lime juice 10ml sugar syrup 2 slices cucumber Ice cubes, to serve Ginger beer, to serve Mint sprig, to decorate 1. Place the vodka, lychee liqueur, lime juice, syrup and cucumber in a cocktail shaker. Use a muddler or a pestle to crush the cucumber until softened. 2. Add ice cubes. Shake for 30 secs or until chilled. Add ice cubes to a serving glass. Strain the mixture through a fine sieve over ice in the glass. Top with ginger beer and decorate with mint to serve.
